Anyways, here is the recipe for Pudina Jalfrazi (aka the “broccoli dish” ;))
Ingredients:
- · Garlic
- · Curry leaves
- · Bay leaves
- · Cinnamon sticks
- · Elaichi
- · Cloves
- · Jeera (cumin seeds)
- · Watermelon seeds- to thicken the gravy (can substitute with Kajus)
- · Green chillies
- · Mint leaves
- · Coriander/cilantro
- · Coconut milk – 1 can
- · Potato
- · Paneer (optional)
- · Onions
- · Broccoli (if needed)
- · Beans
- · peas
- · garam masala
- · red chilli powder
Preparation (30-40 mins):
· Make a paste of mint leaves, coriander, garlic, coconut milk in a mixer (do not add water)
· Make powder of watermelon seeds or kajus as per thickness of gravy needed
· Fry paneer separately in butter or oil if needed
· Chop onions (lengthwise), potatoes (squares)
· In a pan, pop the bay leaves, curry leaves, garlic, cumin seeds, cinnamon sticks, elaichi, jeera, green chillies in 3-4 tablespoons of oil
· Add potatoes before onions, fry them until light brown
· Add onions and fry them until medium brown
· Add beans, other green vegetables to fry
· Keep frying all the vegetables and onions, potatoes until semi soft
· Add garam masala, red chilli powder (as needed per green chillies used), salt
· After 5 -10 mins of frying, add the mint past
· Add water if needed now as per thickness of gravy
· Add fried paneer cubes
· Add watermelon of kaju powder
· Let the vegetables boil for med-high heat for another 10 mins
· Add coriander to garnish
